Gluten-Free Chocolate Cupcakes

Simple gluten-free chocolate cupcakes recipe (kid-approved!)

We celebrated my son’s 9th birthday this week with a fun Star Wars-themed party! He wanted chocolate cupcakes with chocolate icing and I wanted them to be gluten-free. I couldn’t find exactly what I was looking for so I adapted this recipe. It turned out wonderfully!

And no, I won’t admit how many cupcakes I ate. 😀

Gluten-Free Chocolate Cupcakes

Yield: 12


  • ¼ cup coconut flour
  • ¼ cup cacao powder
  • ¼ teaspoon sea salt
  • ½ teaspoon baking soda
  • 3 eggs
  • ¼ cup coconut oil, melted
  • ½ cup honey
  • 1 ¼ teaspoon vanilla extract
  • ½ teaspoon almond extract


  1. Preheat oven to 375° and line muffin tin with paper liners.
  2. In a small bowl, combine coconut flour, cacao powder, salt, and baking soda.
  3. In a separate bowl, whisk together the eggs, coconut oil, honey, vanilla, and almond extract.
  4. Whisk the dry ingredients into the wet ingredients until well combined.
  5. Fill each muffin tin about halfway.
  6. Bake at 375° for about 20 minutes.
  7. Cool completely before frosting.

I topped mine with Elana’s Chocolate Frosting (substituting honey for agave).
