Grain-Free Pumpkin Pancakes with Cinnamon Honey Syrup

I'm SO ready for fall!! These grain-free pumpkin pancakes would be perfect! Plus, the cinnamon honey syrup recipe sounds so easy!

Pancakes are a favorite at our house, and with pumpkins in season, I knew it was time to have pumpkin pancakes!

These pancakes are delicious on their own, but do NOT skip the syrup. It is the crowning jewel of this recipe and I’m telling you, you need this syrup in your life.

Grain-Free Pumpkin Pancakes with Cinnamon Honey Syrup

Yield: 10-12 small pancakes

Ingredients

    For the Pancakes
  • 4 eggs
  • ½ cup pumpkin puree
  • 2 tablespoons honey
  • 3 tablespoons coconut milk or whole milk + more if batter is too thick
  • 1 tablespoon butter or coconut oil + more for cooking pancakes
  • 1 teaspoon vanilla extract
  • ½ cup coconut flour
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • For the Syrup:
  • ½ cup honey
  • ¼ cup butter
  • ¼ teaspoon ground cinnamon

Directions

    For the Pancakes:
  1. Heat a griddle to medium heat.
  2. Whisk eggs, pumpkin, honey, milk, butter, and vanilla together until well combined.
  3. In a separate bowl, mix coconut flour, baking soda, and spices together until combined.
  4. Mix dry ingredient in with wet ingredients. The batter will be very thick, but you can add more milk if needed.
  5. Grease the griddle with coconut oil or butter.
  6. Spoon the batter onto the griddle and flatten and shape the pancakes. Try to keep them small (bigger than silver dollar pancakes but smaller than traditional pancakes).
  7. Cook a few minutes until lightly browned, then flip and cook the other side for about a minute, or until cooked through. Do not walk away, they can burn easily.
  8. For the Syrup:
  9. To make the syrup, heat the honey, butter, and cinnamon in a small sauce pan over low heat until melted. Stir frequently.
  10. Top pancakes with butter and syrup.

  3. Oooh, these look absolutely delish and I love the addition of coconut oil and coconut flour! I’m on a huge pumpkin kick this year and these sound just perfect. That syrup is so different and much healthier than the standard sugar-based syrups too, so I can’t wait to make these this weekend!

  12. I just made these this morning — yum! I only had 3 eggs, so I had to add a little more liquid, but they still turned out okay. I think the fourth egg would’ve helped them hold together a little better, but in a pinch, three worked well enough. Definitely a keeper recipe! :)
