Pumpkin Chocolate Chip Mini Muffins

These delicious pumpkin chocolate chip mini muffins are the perfect fall snack! And you would never guess they are gluten free!

Despite being grain-free, our family still loves baked goods! These muffins are made with coconut flour and the kids love them.

Serve with a cold glass of milk for a delicious afternoon snack.

Pumpkin Chocolate Chip Mini Muffins

Yield: 30

Ingredients

  • 5 eggs, room temperature
  • ½ cup butter, melted and cooled
  • ½ cup pumpkin puree
  • 2 tbsp maple syrup
  • 2 tbsp honey
  • 1 tsp vanilla
  • ½ cup coconut flour, sifted
  • ½ tsp baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • pinch sea salt
  • ¼ cup mini chocolate chips

Directions

  1. Preheat oven to 350°.
  2. Grease mini muffin tin or use paper liners.
  3. Beat eggs, butter, pumpkin, syrup, honey, and vanilla together until well combined.
  4. In a separate bowl, whisk together coconut flour, baking powder, spices, and salt.
  5. Mix dry ingredients in with wet ingredients.
  6. Stir in chocolate chips.
  7. Spoon mixture into muffin tins.
  8. Bake at 350° for 20 minutes, or until toothpick comes out clean.

  6. Do these need to be ‘mini’ muffins? I don’t have the mini tin right now… but these sound yummy.
    How can I make the regular tin work?
