Quick and Easy Taco Salad

Reinventing fast food - taco salad is quick and easy to make, plus it is healthy too!

As much as I enjoy cooking, there are still days where dinner is the last thing on my mind. Then, when 5:30 rolls around, I panic and wonder what I’m going to do for dinner!

We avoid eating out, so just ordering a pizza isn’t really an option. So, to avoid spending a fortune on food that will do more harm than good, I try to have “backup meals” in my arsenal!

“Backup meals” are quick and easy meals that I can make using ingredients we always have on hand. These meals are lifesavers on the nights when I’m unprepared and lacking energy.

Taco salad is one of my backup meals. My entire family loves it, it can be made in under 20 minutes, and we always have the ingredients on hand. We love that it is so versatile, so it’s not a big deal if I’m missing an ingredient or two. The kids love to customize their own bowls with their favorite toppings.

Quick and Easy Taco Salad


    Seasoned Beef Mixture:
  • 1 lb ground beef
  • 2 cups cooked pinto, red, or black beans
  • 1 cup frozen corn
  • 1 tablespoon taco seasoning
  • Toppings:
  • lettuce
  • corn chips
  • guacamole
  • sour cream
  • shredded cheese
  • salsa
  • chopped tomatoes
  • black olives
  • ranch dressing
  • any other toppings you like!


  1. Brown ground beef in a skillet over medium heat.
  2. Stir in beans, corn, and taco seasoning (mix taco seasoning with about a 1/4 cup of water if the beef mixture is too dry) and cook until heated through.
  3. Create taco salad bowls with beef mixture, corn chips, lettuce, and any other toppings you like!
