Rosemary Roasted Red Potatoes

Dress up your potato side dish without a lot of extra work! These rosemary roasted red potatoes are delicious AND easy!

These rosemary roasted red potatoes are so good and so easy. They make a great side dish for, oh, just about anything!

I love making these because they look like they took they took a lot of time and effort when, really, they are super easy to prepare. What can I say, I like to make nice meals without actually spending hours and hours cooking. 😉

Rosemary Roasted Red Potatoes


  • 2 - 2.5 lbs red potatoes
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons sea salt
  • 1/2 teaspoon pepper
  • 2 sprigs fresh rosemary, chopped


  1. Preheat oven to 400 degrees
  2. Cut potatoes into wedges. (Cut potato lengthwise, place cut-side down, then cut lengthwise again. Then cut each wedge into 2-3 sections - approximately 1 inch pieces.)
  3. In a large bowl, mix together the olive oil, salt, pepper, and rosemary.
  4. Add the potatoes to the bowl and toss until well-coated.
  5. Line a baking sheet with parchment paper.
  6. Pour the potatoes onto the baking sheet and spread out in a single layer.
  7. Roast for 40-45 minutes, tossing about halfway through the cooking time.
