Simple and Delicious Slow-Cooker Pork Loin

This slow-cooker pork loin is fall-apart tender and calls for only a few simple ingredients! Makes a great Sunday lunch!

This pork loin is incredibly easy to prepare and is tender and juicy after slowly cooking in the crock-pot. This makes an excellent Sunday lunch that you can quickly prepare in the morning before church!

Aside from the lemon juice, you do not need to add any liquids – it will produce it’s own juices. The pork will be so tender and juicy that it will be practically falling apart. It took some very careful maneuvering to stage this photograph!

This slow-cooked pork loin pairs wonderfully with white bean purée and a Greek salad.

Simple and Delicious Slow-Cooker Pork Loin

Ingredients

  • boneless pork loin or tenderloin, 3-4 lbs
  • juice from 1 lemon
  • 3-4 garlic cloves, minced
  • 1 teaspoon parsley flakes
  • ½ teaspoon thyme
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper

Directions

  1. Add pork to your slow-cooker.
  2. Mix together the remaining ingredients and evenly pour on top of the pork.
  3. Cook on low for 4-6 hours.

  5. Sounds yummy! We have a pork picnic roast in the slow cooker now, but I seasoned it with balsamic vinegar, salt, pepper, rosemary, and garlic. I don’t think I’ve ever tried lemon on a pork roast, so I’ll have to try that sometime!

    Tried this tonight. Oh my goodness. Went to take it out of the crock pot and it started falling apart. Got it to the serving plate to let it sit for a few minutes before cutting. When I started to cut it, it just fell apart. I had to taste it at that point and it was so good. It wouldn’t slice, each time I tried to slice it, it just fell apart so we turned it into pulled pork. I’ve never tasted anything to good. Its one I’ll be doing again. Thanks for sharing.

    I have never made a pork roast before but they were on for a good price this week. I thought I would go for something simple and this recipe worked great! Except I totally overcooked it. Apparently 4 hours on high was way too long for the size of roast I bought! Oh well, never mind it is still delicious. I found the liquid to be too salty to make gravy with, so I used it as liquid to mash the potatoes. Y U M ! ! Well, I did add a bit of cornstarch to some and had it… I must admit I like salty food. I think I will go buy another roast on sale and make again this week!

    It would be so helpful if you could add the size of the pork loin you used as a guide for others when trying to figure out cooking times!
    This had good flavor but was so completely overcooked when I did it on high for 4 hours… :( Going to shred what’s left and put it in some soup so it’s not a total wash but I am curious to know how big your tenderloin was…
