Simple Beef & Veggie Casserole

This beef & veggie casserole couldn't be simpler! Great for nights when there's "nothing" to make for dinner.

This simple beef and vegetable casserole has become a regular in our home – especially on nights when there’s “nothing” for dinner. It uses simple ingredients that we almost always have on hand and it doesn’t take very long to prepare.

Simple Beef & Veggie Casserole


  • 3-5 lbs russet potatoes
  • 1 lb ground beef
  • ½ yellow onion, diced
  • 2-3 cloves of garlic, minced
  • 2 cups frozen mixed vegetables
  • ½ cup butter
  • 2 cups shredded cheese
  • salt & pepper, to taste


  1. Preheat oven to 375°.
  2. Cut the potatoes into cubes and boil until soft.
  3. While potatoes boil, brown ground beef, onion, and garlic in a skillet.
  4. Boil vegetables in a saucepan until soft.
  5. After everything is cooked, mix all ingredients together and pour into an 8×11 baking dish.
  6. Bake at 375° for 10 minutes, or until cheese melts.
